Hand-picked fruit was whole-bunch pressed to tank for cold settling. Clarified juice was racked and inoculated for primary fermentation. After a complete malolactic fermentation, the base wine was prepared with the addition of a small amount of reserve wine (15%) and underwent the Charmat method of sparkling production.
