A medium-bodied Traditional Method sparkling wine with intense ripe citrus and apple fruit aromas and flavours, framed by complex toast and brioche.

The wine displays incredible line and length of structure, driven by taut acidity and fine-shaping phenolics.

Hand-picked Chardonnay fruit was whole-bunch pressed, with only the free-run fraction taken for fermentation. Fermented at moderate temperatures in a combination of stainless-steel and oak vessels, with a small proportion of new French oak used.

Tiraged in October of 2022 for secondary fermentation and left on fine lees in bottle for 
35 months prior to disgorgement.

Winemaking & viticulture

Hand-picked Chardonnay fruit was whole-bunch pressed to achieve gentle extraction and purity of flavour. The base wine was crafted to emphasise natural acidity and structure before undergoing traditional method secondary fermentation in bottle.

Extended time on lees has contributed texture, depth and complexity, while maintaining freshness and precision.

“A chiselled, fine-spun sparkling that unfurls slowly in the glass, revealing ripe lemon, green apple, salted water cracker and brine, before deeper autolytic notes emerge with air — brioche and white almond. There’s a lovely sense of coiled linearity. The palate delivers seamless texture and effortless flow, with chalky grip framing the sides and attractive bitter preserved lemon nuance. Clean, precise acidity draws the wine long. Detail, shape, complexity and length are held in masterful balance between fruit and autolysis. A strong release.”

The palate is light and dry but with good intensity and flow, the finish cleansed by phenolics as much as acidity. Stone-fruit flavours mingle attractively with aged nuances. A nicely executed sparkling boasting a fine bead and notes of apple blossom, white flowers, dusty lemon and quince, cut apple, almond meal and biscuit with a saline oyster shell edge. Built on fresh acidity with autolysis-led notes of toasted nuts and almond bread. Good all-round balance.”
